Roast Pork Tenderloin with Apricot Sauce

I've decided that I need to learn how to cook meat. I can do basic fish, shrimp, and chicken, but that's about it. So when I saw this recipe on the internet machine yesterday, it seemed too simple to pass up. I was right! It was super delicious. We had no leftovers, Lee devoured it.

My tenderloin took about ten minutes longer than hers, but that gave the sauce plenty of time to simmer down so it was a bit thicker, which I liked. I think next time I'm going to do a pineapple sauce, just for fun.

Tenderloin is super easy plus there are so many different ways to make it. My two favorite ways are in the slowe cooker for pulled pork sandwiches and Paula Deen has an amazing recipe for Herb Crusted Pork Tenderloin. I am definitely going to try your recipe.

I do ready it fairly regularly but somehow I missed the puppy post, so I immediately clicked over and did some stalking. OH. MY. GOD. Adorable. His ears are sticking up so early! My friend's shepherd's ears did the triangle thing where the tips touched for about two months as a puppy and it was the cutest shit ever. You have to promise me you will share pictures of him regularly, he is just too cute not to!

I'm a big fan of pork tenderloin, but for some reason I thought it was more complicated than it actually is. Both of those recipes sound delicious! I'm going to have to track down that Paula Deen herb one for sure. My good friend does a super basic bake and then serves it with little potato sandwich rolls and tzatziki sauce, it's to die for!
