We have been obsessed with soft boiled eggs lately. Every weekend we end up having soft boiled eggs on something for breakfast.
My foolproof method that always works perfectly:
1. Fill small pot with 1/4 inch water.
2. Insert eggs.
3. Bring to a boil.
4. As soon as it boils, turn heat down to low, cover, and set timer for 6 1/2 minutes.
5. When timer goes off, immediately put eggs in cold water bath.
6. Peel. {Careful, it can be tricky!}
It's the steam that makes the magic happen, so cover with an airtight lid and don't touch it until that timer dings.
Eat on some sort of bread product with cheese, tomato, avocados, salt, pepper, and whatever else sounds delicious at the moment!

5 Ingredient Fish Tacos
First of all, 100% of the credit for this deliciousness goes to Samm at Dysfunctional Ever After. I saw it on her blog and immediately knew it was a winner. This recipe is crazy easy and super duper yummy.
Mr. Husband is a huge fan of fish tacos, and this is the easiest recipe ever. Perfect for lazy weeknights when I want to feel like I've accomplished a homemade meal while putting in as little effort as possible.
5 Ingredient Fish Tacos
fish sticks {I used Gordon's tilapia fish sticks.}
corn tortillas
shredded cabbage {I used a bagged coleslaw mixture.}
red onions, diced
tartar sauce
Cook the fish sticks however the box tells you to. When they have one minute left in the oven, put your tortillas on the other rack so they get warm and soft {DO NOT omit this step or your meal will be at least 50% less satisfying}.
Combine all ingredients into delicious taco magic. Be sure to use plenty of tartar sauce so they aren't dry.
I would advise you to go read Samm's instructions as well, much more amusing then mine.

Happy birthday to our ginormous puppy!
Sir Poindexter turns one today! We are so incredibly lucky, he is the bestest gigantic doggy in the world. Rescue the homeless creatures, people; they are worth it.
